Chicken Almond 2 whole breasts deboned and finely sliced 1/4 cup peanut oil 2 cans bean sprouts 2 cups bias cut celery 1 cup diced bok choy 1/2 cup blanced almond slivers 2 Tablespoons Soy Sauce 2 Tablespoons MSG* 2 cups chicken broth 1/4 cup cornstarch 1/2 cup water Stir fry chicken strips in oil - add soy sauce, MSG, celery - Let steam 3 minutes Add rest of ingredients except cornstarch and water and boc choy. Cook and steam 5 minutes Blend cornstarch and water. Add to chicken mixture and cook until thickened. Add bok choy last. Serve over fried rice. * We now know MSG can cause health issues. I think it is safe to omit this from the recipe.
Chicken Parmesan 2-4-6 whole boneless, skinless breasts 1/2 cup butter melted 3/4 cup Pepperidge Farm Seasoned Stuffing Mix crushed very fine or bread crumbs seasoned 1/2 cup Parmesan cheese 1/2 tsp. salt 1 Tablespoon Basil Mix above ingredients. Spread on chicken lightly. (do this by spreading with fingers) Do not coat too heavy or it will brwon too fast and the flavor will not be as good. Put in shallow, foil lined baking dish. Bake at 400 degrees for 25 minutes. Chicken should be golden brown. Note: For appetizers, cut chicken into pieces the size of a quarter. Cover with Crumb mixture. Bake 400 degrees

Escalloped Chicken and Noodle Stroganoff 1 Broiler fryer - cooked, boned, and cut up reserve broth 2 cups sour cream 3 or 4 cups medium noodles cooked in broth 2 cans mushroom soup 2 cans cream of chicken soup 1 small onion minced (mix) sprinkle with cracker crumbs Bake at 350 degrees 'til bubbly. 45 minutes
Oven Fried Chicken 2/3 cup oil (or 1/3 cup oil and 1/3 cup margarine) in cooking sheet melt in jelly roll pan in bag place 1 cup flour 1 tsp. salt 2 tsp. pepper 2 tsp. paprika 1 tsp. garlic salt 1 tsp dried marjarom Take chicken pieces and roll in melted oil - put in dry mix and shake. Put on paper towel and let stand. Will give youa better crust. Place on oiled jelly roll pan and bake skin side up. 375 degrees about 45 minutes. Turn and cook another 15 minutes.
Pressed Chicken To eight cups water add 6 cups chicken parts add couple carrots, celery, onion studded with cloves, bay leaf and parsley. Cook until done. Take chicken off bones and shred. Chop up some of the cooked carrots 1/4 cup parsley 2 envelopes gelatin to 2 1/2 hot broth. Pack chicken mixture in loaf pan and pour broth over. Refrigerate overnight. Unmold and garnish with deviled eggs and serve with mayonnaise.

If I were to make it myself now, this is probably how I would do it... Brown meat and onion with a small amount of olive oil. Add soups, peas (drained), and pimentos (drained). Cook noodles, drain. Mix into meat/soup. Bake in a baking dish at 350 degrees until done. (judge for yourself)

Grape Leaf Rolls ~ Fred Sayfie 100 grape leaves 1 cup rice (uncooked) 2 pounds hamburg or ground lamb 1 onion (optional) Pepper, cinnamon, to taste 1 Tablespoon salt 2 lemons Mix rice, meat, onion, + spices + juice of one lemon. Place about 1 Tablespoon of meat mixture on veined side of each leaf. Turn in the side ends + roll up completely. Line bottom of saucepan with 3 or 4 grape leaves (without meat). Place rolled leaves on top in even layers. Use an inverted plate to hold down rolls. Add water to cover. Bring to boil, then reduce to low heat + cook 30 minutes. Add juice of one lemon before serving.

In large flat serving dish place aternately layers of noodles, meat mix, mozzerella cheese, ricotta cheese, + parmesean cheese, ending with meat sauce + parmesean. Bake until bubbly. Cut in squares to serve. 350 degrees for 40 minutes.
