(Great) Grandma Jager's Date Pinwheel Cookies

2 1/4 cups chopped dates
1 cup sugar
1 cup water
1 cup chopped nutes
1 cup shortening
2 cups brown sugar
3 eggs - well beaten
4 cups sifted flour
1/2 tsp. salt
1/2 tsp. baking soda

Combine dates, sugar, and water in pan and cook over low heat until thick. About 10 minutes. 
Cream shortening and add in brown sugar gradually.
Add well beaten eggs and beat well.
Add remaining ingredients sifted together and mix well. Chill thoroughly.
Divide dough into tow parts and roll eat our separately into rectagle a little less than 1/4 inch thick. Spread each with filling and roll up as for a jelly roll.
Chill thoroughly overnight, if possible. Cut 1/4 inch thick. Bake in moderately ? 
400 degrees oven for 10 to 12 min. Makes 5 doz. cookies

Apple Bars

2 1/2 cup flour
1 Tbsp. sugar
1/2 tsp salt
2/3 cup milk
1 egg separated
1 cup lard

Filling
1 quart apples sliced (4 cups)
1 cup sugar
1 tsp. cinnamon
2 Tbsp. butter, scant

Cut flour, sugar, salt, and lard together as for pie crust.
Beat well-milk plus egg yolk and add to crumbs. Roll out 1/2 dough to fit greased cookie sheet with truned up edges. 10x15
Prepare filling by blending together apples, sugar, and cinnamon.
Spread this over crust. Dot with butter.
Roll out top crust. Prick with fork.
Brush to with egg white and sprinkle with sugar.
Note for sweeter apples, use only about 2/3 cup sugar.

combine and let stand for 5 minutes
1 cup dates
1 1/2 tsp soda
1 cup boiling water

meanwhile
2 cups flour
1 cup Hellmans mayonaise
1 cup sugar
Mix together dates - etc.
Pour in 9x13 (pan)
combine
1/2 cup brown (sugar)
1/2 cup nuts
3 Tbs milk
drizzle over batter
bake 350 degrees for 35-40 minutes

3 layer Bars

1/2 cup oleo
1/4 cup sugar
5 Tablespoons cocoa
1 tsp. vanilla
1 egg

Boil - stir
add 2 cups crushed graham crackers
1/2 cup nutmeats
1/2 cup coconuts

Pat in 9x13 pan. cool

Mix 1/4 cup oil
3 Tablespoons milk
2 1/2 cup powdered sugar
1 tsp. vanilla

Spread like frosting

Melt
2 squares semi seet chocolate
2 Tablespoons oleo

Spread.

Almond Cookies

1 heaping cup almond paste
3/4 cup sugar
3 egg whites beaten stiff

Mix paste and sugar. add egg whites.
Drop on waxed paper lined cookie sheet. Bake 325-350 degrees for 30 minutes or until brown.
Top with 1/4 of a candied cherry before baking.

Almond Squares

1 cup sugar
1/2 cup oleo
2 teas. -3 teas. almond extract
2 beaten egg yolks
1 teas. baking powder
2 stiffly beaten egg whites
3/4 cup brown sugar
1 1/2 cup flour
1/2 cup nuts

Cream butter and sugar; add eggs and flavoring: cream well. Sift flour and baking powder - add to creamed mixture.
Press in 8x8x2 pan. Fold brown sugar gradually through stiffly beaten egg whites and spread over mixture in pan. Sprinkly with nuts.
bake 350 degrees 25-30 minutes
cool well and cut.

Church Window Cookies

1 cup chocolate chips
1 Tbsp. margarine
1 cup powdered sugar
1 egg
1 tsp. vanilla
1/2 cup chopped nuts
3 cups colored marshmellows
flaked coconut

in top of double boiler, melt chocolate chips (use real chips, not flavored) and margarine over hot water. Add sugar, egg, vanilla, and nutmeats. Mix well.
Remove from heat. Cool slightly, add marshmellows.
Shape mixture into a log by rolling on sheet of waxed paper. Then roll in coconut.
Store in refrigerator. Slice cookies as needed.

White Fudge

2 1/4 cup sugar
1/2 cup dairy sour cream
1/4 cup milk
2 Tbsp butter
1 Tbsp light corn syrup
1/4 tsp salt

combine, boil to soft ball stage
remove from heat. cool to lukewarm 110 degrees. Stir in 2 tsp. vanilla.
Beat until it just begins to lose its gloss. Stir in 1 cup chopped walnuts and 1/3 cup quartered cherries. Spread in 8 inch pan.
Let stand until firm

Date Dreams - Bea Pedigo · Christmas 1969

2 cups dates - cut in small pieces
2 eggs
1 cup oleo - 1 cup sugar
5 1/2 cups rice krispies
1/2 cup nuts, chopped
2 tsp vanilla
coconut
method: - Melt oleo - add beaten eggs, sugar, and dates. Cook over low heat stirring all the time until thick - takes about 5 minutes.
Remove from heat, add nuts and rice krispies. Drop by small spoonfuls on wax paper. Shape to look like a date and roll in coconut and set aside to dry.

Filled Cookies 400 degrees

3 eggs
1 cup shortening (1/2 butter 1/2 lard)
1 cup brown sugar
1 cup white sugar
1/2 cup sour milk
1 tsp baking soda
1 tsp (rounding) baking powder
5 cups flour
1/2 tsp salt
vanilla

Roll thin.  (Cut into circles using a drinking glass.  Put a small amount of raisin filling in the center and top with another circle.  Press edges with a fork to seal.  Or fold over cookie to make a half moon.  Seal edges)  Bake 10-12 minutes

Raisin Filling

1 cup raisins (seedless)
1 cup brown sugar
2 Tbs flour
1 cup water
1 cup nut meat (optional)

cook until thick. Cool

Imperial Cookies - Mom made these all the time. 
this is a double batch - see 1st recipe card for single batch

4 sticks (Imperial margarine)
2 cups sugar
1 tsp. soda
1 Tbs vinegar
3 cups flour
Roll into small balls
Back 300 degree for 25 minutes

Jiffy Cookies - Dorothy Parker

1 package instant pudding
3/4 cup bisquick or Jiffy mix
1/2 stick oleo (melted)
1 egg - nuts if desired
ungreased pan 350 degree for 10-15 minutes. Frost lightly.

Lacey Almond Cookies

1/2 pound brown sugar
3/4 cup flour
1 tsp cinnamon
1 cup peeled coarsely chopped almonds
5 Tbs butter

Knead all into firm ball. Shape in marble sized ball. Arrange far apart on butter(ed) cookie sheet and flatten with knife dipped in water.
Bake 375 degrees until golden brown. Cool on sheet.

Mini Cupcake Cookies

use tiny muffin pans sprayed well with Pam
Bake 375 degrees for 12 minutes

1 stick margarine
1 cup brown sugar
1 cup half & half
2 cups nuts
12 ounces mini chocolate chips

cream margarine and sugar. add half & half, crumbs (?) and nuts and chips. Fill tins almost full. Turn out immediately while hot. Cool and frost with chocolate frosting (canned)

Mint Sticks

2 squares unsweetened chocolate
1/2 cup butter
2 eggs
1 cup sugar
1/4 tsp peppermint (extract)
1/2 cup flour
1/4 tsp salt
1/2 cup nuts

Melt chocolate and butter. Beat eggs until thick. Gradually add sugar to eggs.
Add cooled chocolate, butter and extract. Fold in flour, salt, nuts.
Spread in greased 13x9 pan. Bake 15-20 minutes 350 degrees. Cool.

1 cup confectioners sugar
2 Tbs butter
1/2 tsp peppermint extract
1 Tbs hot milk
Spread over cool cookie. Cool
Melt 1/2 square chocolate and 1 1/2 Tbs butter. Cool. Drizzle over top.

Mississippi Mud Brownies
Bake 350 degrees about 35 minutes

1 stick margarine
4 eggs
2 cups sugar
1/2 cup oil
1 1/2 cup flour
1/3 cup cocoa
1 tsp vanilla

Mix. Add nuts 1 cup not chopped. mix
9x13 pan greased and floured
add mini marshmellows to top (2 handfuls)

Mocha Balls

2 1/2 cups crushed Vanilla Waffers
1 cup powered sugar
2 Tbl spoons cocoa
1 cup finely chopped nuts
3 Tbl spoons corn syrup
1/4 cup bourbon

Mix together, roll into balls and roll in powdered sugar

Molasses Cookies Gingerbread Men

3/4 cup shortening
1 cup sugar
1/4 cup molasses
1 egg
2 tsp baking soda
2 cups flour
1/2 tsp cloves (ground)
1/2 tsp ginger (ground)
1/2 tsp cinnamon (ground)
1/2 tsp salt

Melt shortening. remove from heat.
add sugar, molasses, egg. beat. sift dry ingredients add to first. Mix well and chill. 350 degrees.

Pastry Fans about 40

1 cup butter
1 1/2 cup flour
1/2 cup sour cream
cut butter in flour. Stir in sour cream
Shape in ball. Refrigerate 8 hours or overnight
Cut in two pieces
roll on piece 8x16 - ? on sugar board
Fold ends in toward middle to make square.
Fold folds into middle
sprinkle with sugar flatten
Fold in half lengthwise like book. Cut into 1/2 inch slices.
Dip in sugar. 
Put on ungreased cookie sheet like v's
350 degrees 20-25 minutes

Peanut Blossoms

1 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup shortening
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
2 Tbs milk
1 tsp vanilla

roll in sugar
place on ungreased cookie sheet
Bake 375 degrees for 8 minutes
Remove from oven. Place a solid milk chocolate kiss.
Press so cookie cracks. Bake 2-5 minutes longer

Peanut Butter Cookies

1/4 cup shortening
1/4 cup butter
1/2 cup peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 1/4 cup flour
1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt

Bake 375 degrees

Peanut Cookies

1 cup white sugar
1 cup brown sugar
2 eggs
1 1/2 cup flour
1 tsp baking soda
1 tsp baking powder 
1 cup oatmeal
1 cup cornflakes
1 tsp vanilla
1/2 pound spanish peanuts

Cream shortening, sugar and eggs. Sift dry ingredients and add to creamy mixture.
Add oatmeal, cornflakes, vanilla, and peanuts. Drop by teaspoonful on baking sheet.
Bake 350 degrees 8-10 minutes
I like to add Product 19, Kelloggs K or Rice Krispies in place of Cornflakes some time.

Peppermint Meringues

2 egg whites
1/8 tsp salt
1/8 tsp cream of tartar
1/2 cup sugar
2 peppermint candy canes crushed

225 degrees 1 1/2 hours. Leave in oven at least another hour with door open.
Store in air tight container.

Rice Krispie Bars

3 Tbs margarine
40 marshmellows or 4 cups miniature marshmellows
6 cups rice Krispies
vegetable cooking spray 13x9x2 pan
Melt butter and marshmellows. Add cereal. Chill

Rolled Cookies

1/2 (cup?) shortening (half butter)
3/4 cup sugar
1 egg
1 Tbs milk
1 tsp. vanilla
1 1/4 cup flour
1/4 tsp baking powder
1/4 tsp salt

Chill dough 3 hours

425 degrees 5-7 minutes

 

Rosettes

2 to 3 in sauce crisco 400 degrees
1 egg
1 Tbs sugar
1/2 tsp salt
1 Tbs vegetable oil
1/2 cup milk
1/2 cup flour

Beat egg etc
Heat rosette iron tap oil off
Dip hot iron just to top edge
Fry til brown

Sand Cookies

Cool- 3 sticks Oleo (melted)
1 1/2 cup white sugar
3 cups sifted flour
1 tsp baking soda
2 tsp vanilla

Put into 2 rolls and chill
Slice 1/4 inch thick and place on ungreased cookie sheets.
Bake 20 minutes to 1/2 hour at 350 degrees.

1 cup oatmeal
1 package (large) chocolate chips

1 cup sugar
1 cup lard
salt
1/2 cup sweet milk
3 tsp baking powder
tsp. vanilla
1/4 tsp. nutmeg
Flour

Sugar Cookies

1 cup butter
1 1/2 cup sugar
2 eggs
2 Tbs. sour cream
1 tsp baking soda
3 cups sifted flour
1/2 tsp nutmeg
1 tsp vanilla

Chill dough [roll] 1/8 thick

Surprise Bars - Bea Pedigo 4-3-75

2 cups sugar
1 1/2 cup oil
4 eggs
2 cups sifted flour
2 tsp baking soda
1/2 tsp nutmeg
2 tsp cinnamon
3 cups grated carrots
1 cup chopped nuts
1 cup raisins

Beat sugar and oil together, add eggs and beat again
Sift all dry ingredients together and add to egg mixture.
Fold in carrots, nuts and raisins.
Pour into greased and floured 10x15x1 cookie sheet and bake at 350 degrees for 50 to 60 minutets.
When cool ice with the following
1/4 cup oleo
1 4 ounce package Philadelphia cream cheese
2 cups confectioners sugar
1 tsp vanilla

Cut into bars-yield 44 to 48 bars

Christmas was always a big thing in our household and my mom always went out of her way to make it special for everyone. She would make lots of goodies, with emphasis on certain favorites. There was one particular mint bar she made EVERY YEAR. She would try to get me to eat them (and take them home) and I would always tell her I didn't like them. She would insist that I did because it was written in her book. I found the recipe in one of her cookbooks and sure enough, it is written [in her book] that I liked them. For the record, I don't like them.
