(Great) Grandma Jager's Date Pinwheel Cookies 2 1/4 cups chopped dates 1 cup sugar 1 cup water 1 cup chopped nutes 1 cup shortening 2 cups brown sugar 3 eggs - well beaten 4 cups sifted flour 1/2 tsp. salt 1/2 tsp. baking soda Combine dates, sugar, and water in pan and cook over low heat until thick. About 10 minutes. Cream shortening and add in brown sugar gradually. Add well beaten eggs and beat well. Add remaining ingredients sifted together and mix well. Chill thoroughly. Divide dough into tow parts and roll eat our separately into rectagle a little less than 1/4 inch thick. Spread each with filling and roll up as for a jelly roll. Chill thoroughly overnight, if possible. Cut 1/4 inch thick. Bake in moderately ? 400 degrees oven for 10 to 12 min. Makes 5 doz. cookies
Apple Bars 2 1/2 cup flour 1 Tbsp. sugar 1/2 tsp salt 2/3 cup milk 1 egg separated 1 cup lard Filling 1 quart apples sliced (4 cups) 1 cup sugar 1 tsp. cinnamon 2 Tbsp. butter, scant Cut flour, sugar, salt, and lard together as for pie crust. Beat well-milk plus egg yolk and add to crumbs. Roll out 1/2 dough to fit greased cookie sheet with truned up edges. 10x15 Prepare filling by blending together apples, sugar, and cinnamon. Spread this over crust. Dot with butter. Roll out top crust. Prick with fork. Brush to with egg white and sprinkle with sugar. Note for sweeter apples, use only about 2/3 cup sugar.

Almond Cookies 1 heaping cup almond paste 3/4 cup sugar 3 egg whites beaten stiff Mix paste and sugar. add egg whites. Drop on waxed paper lined cookie sheet. Bake 325-350 degrees for 30 minutes or until brown. Top with 1/4 of a candied cherry before baking.
Almond Squares 1 cup sugar 1/2 cup oleo 2 teas. -3 teas. almond extract 2 beaten egg yolks 1 teas. baking powder 2 stiffly beaten egg whites 3/4 cup brown sugar 1 1/2 cup flour 1/2 cup nuts Cream butter and sugar; add eggs and flavoring: cream well. Sift flour and baking powder - add to creamed mixture. Press in 8x8x2 pan. Fold brown sugar gradually through stiffly beaten egg whites and spread over mixture in pan. Sprinkly with nuts. bake 350 degrees 25-30 minutes cool well and cut.
Church Window Cookies 1 cup chocolate chips 1 Tbsp. margarine 1 cup powdered sugar 1 egg 1 tsp. vanilla 1/2 cup chopped nuts 3 cups colored marshmellows flaked coconut in top of double boiler, melt chocolate chips (use real chips, not flavored) and margarine over hot water. Add sugar, egg, vanilla, and nutmeats. Mix well. Remove from heat. Cool slightly, add marshmellows. Shape mixture into a log by rolling on sheet of waxed paper. Then roll in coconut. Store in refrigerator. Slice cookies as needed. White Fudge 2 1/4 cup sugar 1/2 cup dairy sour cream 1/4 cup milk 2 Tbsp butter 1 Tbsp light corn syrup 1/4 tsp salt combine, boil to soft ball stage remove from heat. cool to lukewarm 110 degrees. Stir in 2 tsp. vanilla. Beat until it just begins to lose its gloss. Stir in 1 cup chopped walnuts and 1/3 cup quartered cherries. Spread in 8 inch pan. Let stand until firm

Lacey Almond Cookies 1/2 pound brown sugar 3/4 cup flour 1 tsp cinnamon 1 cup peeled coarsely chopped almonds 5 Tbs butter Knead all into firm ball. Shape in marble sized ball. Arrange far apart on butter(ed) cookie sheet and flatten with knife dipped in water. Bake 375 degrees until golden brown. Cool on sheet.
Mini Cupcake Cookies use tiny muffin pans sprayed well with Pam Bake 375 degrees for 12 minutes 1 stick margarine 1 cup brown sugar 1 cup half & half 2 cups nuts 12 ounces mini chocolate chips cream margarine and sugar. add half & half, crumbs (?) and nuts and chips. Mississippi Mud Brownies Bake 350 degrees about 35 minutes 1 stick margarine 4 eggs 2 cups sugar 1/2 cup oil 1 1/2 cup flour 1/3 cup cocoa 1 tsp vanilla Mix. Add nuts 1 cup not chopped. mix 9x13 pan greased and floured add mini marshmellows to top (2 handfuls)

Place a solid milk chocolate kiss. Press so cookie cracks. Bake 2-5 minutes longer

Christmas was always a big thing in our household and my mom always went out of her way to make it special for everyone. She would make lots of goodies, with emphasis on certain favorites. She would insist that I did because it was written in her book. I found the recipe in one of her cookbooks and sure enough, it is written [in her book] that I liked them.
