Chicken Almond

2 whole breasts deboned and finely sliced
1/4 cup peanut oil
2 cans bean sprouts
2 cups bias cut celery
1 cup diced bok choy
1/2 cup blanced almond slivers
2 Tablespoons Soy Sauce
2 Tablespoons MSG*
2 cups chicken broth
1/4 cup cornstarch
1/2 cup water

Stir fry chicken strips in oil - add soy sauce, MSG, celery - Let steam 3 minutes
Add rest of ingredients except cornstarch and water and boc choy.
Cook and steam 5 minutes
Blend cornstarch and water. Add to chicken mixture and cook until thickened. Add bok choy last.
Serve over fried rice.
* We now know MSG can cause health issues. I think it is safe to omit this from the recipe.

Chicken Parmesan

2-4-6 whole boneless, skinless breasts
1/2 cup butter melted
3/4 cup Pepperidge Farm Seasoned Stuffing Mix crushed very fine or bread crumbs seasoned
1/2 cup Parmesan cheese
1/2 tsp. salt
1 Tablespoon Basil

Mix above ingredients. Spread on chicken lightly. (do this by spreading with fingers)
Do not coat too heavy or it will brwon too fast and the flavor will not be as good.
Put in shallow, foil lined baking dish.
Bake at 400 degrees for 25 minutes. Chicken should be golden brown.
Note: For appetizers, cut chicken into pieces the size of a quarter. Cover with Crumb mixture. Bake 400 degrees

Chicken casserole

1 cup chopped celery + 1 small onion
4 cups chicken (breasts)
2 can cream chicken soup
2 cups broth (that chicken breast has been cooked in)
3 eggs
1 1/2 cups mayonnaise (not salad dressing)
4 ounce can mushrooms
Big 15 ounce can chow mein noodles

1 cook chicken with 1 cup chopped celery + small onion
2 strain cut meat to bite size
3 mix the remaing ingredients together with celery and onion from broth adding chicken last
4 Pour into buttered 9x13 pan bake 1 hour at 350 degrees
5 Cover pan. Refrigerate (overnight)
6 Reheat 1 hour

Sauce 
(1) Can cream celery (soup), (1) can (cream) mushroom (soup)
heat - (add some) frozen peas
spoon over cut squares of casserole

Escalloped Chicken and Noodle Stroganoff

1 Broiler fryer - cooked, boned, and cut up
reserve broth
2 cups sour cream
3 or 4 cups medium noodles cooked in broth
2 cans mushroom soup
2 cans cream of chicken soup
1 small onion minced (mix)
sprinkle with cracker crumbs
Bake at 350 degrees 'til bubbly. 45 minutes

Oven Fried Chicken

2/3 cup oil (or 1/3 cup oil and 1/3 cup margarine) in cooking sheet
 melt in jelly roll pan
 in bag place
 1 cup flour
 1 tsp. salt
 2 tsp. pepper
 2 tsp. paprika
 1 tsp. garlic salt
 1 tsp dried marjarom

Take chicken pieces and roll in melted oil - put in dry mix and shake. Put on paper towel and let stand.
 Will give youa better crust.
 Place on oiled jelly roll pan and bake skin side up. 375 degrees about 45 minutes. Turn and cook another 15 minutes.

Pressed Chicken

To eight cups water
add 6 cups chicken parts
add couple carrots, celery, onion studded with cloves, bay leaf and parsley. Cook until done.
Take chicken off bones and shred. Chop up some of the cooked carrots
1/4 cup parsley
2 envelopes gelatin to 2 1/2 hot broth. Pack chicken mixture in loaf pan and pour broth over.
Refrigerate overnight. Unmold and garnish with deviled eggs and serve with mayonnaise.

Texas Style Chicken + Dumplins

A big pot
A big whole chicken
Put chick in water to cover and boil the shit out of it till done. Add after if needed.
Remove chick when done + let cool or you will burn the hell out of your hands.
Add to water 2 cans cream. of chick. soup. Stir - Take 1 large can bisquets open + tear off small pieces + roll in fingers + drop in boiling chick. stock.
Remove chicken from bone + add to pot. Stir - should be done by time you get chick be boned.
Add cooked noodles if desired - enjoy -

Can add Cream of Mushroom or anything you want go wild -

* Dumplins sink when done.

Eleanor's California Casserole

1/4 cup butter
1 cup chopped onions
4 cups cooked rice (white)
2 cups sour cream (no fat)
1 cup cottage cheese
1 bay leaf crumbled
1/2 tsp. salt
1/2 tsp. pepper
1 jar green chili peppers sliced
2 cups grated sharp cheddar cheese

Grease 12x8x2 baking dish.
Saute onion in butter, stir in rice
1/2 rice etc. - repeat
Bake uncovered 20 minutes 375 degrees.

Asparagus Roll-ups - Mary Blair

1 loag xtra fresh sandwich bread
1 can asparagus tips or cooked fresh
8 ounces cream cheese
4 ounces blue cheese
... combine cheese
roll bread flat cut off crust
Spread lightly with butter, then cheese ?
add stalk of asparagus to each slice of bread
roll up like pinwheel - cut in about 4 pieces
bake 350 degrees for 10 minutes
bake at 400 degrees for 15 minutes if frozen

Aunt Sena's cassarole

2 pounds chop suey meat
1 onion
1 c (can?) chicken with rice (soup?)
1 c (can?) cream of mushroom (soup?)
1 c (can?) peas
1 small jar pimentos
1/2 bag noodles
Brown meat and onion. Put water and simmer.
Add soup and simmer.
Bake 1 1/4 (?) 350 degrees

I remember Mom making this and it was good. This recipe makes no sense, though. If I were to make it myself now, this is probably how I would do it...
Brown meat and onion with a small amount of olive oil. Add soups, peas (drained), and pimentos (drained). Cook noodles, drain. Mix into meat/soup. Bake in a baking dish at 350 degrees until done. (judge for yourself)

Baked Beans for BBQ

2 large cans Busch Beans (no onions)
 1 cup Brown sugar
 1 cup Molasses
 1 bottle bacon bits
 2 large Bavarian Sauercraut
 15 ounces applesauce or apple pie mix (I used pie mix)

Mix and pour into large paking pan. Put bacon slices on top. Bake 1 1/2 hour at 400 degrees.
 Good for a Crowd.

Grape Leaf Rolls ~ Fred Sayfie

100 grape leaves
1 cup rice (uncooked)
2 pounds hamburg or ground lamb
1 onion (optional)
Pepper, cinnamon, to taste
1 Tablespoon salt
2 lemons

Mix rice, meat, onion, + spices + juice of one lemon. Place about 1 Tablespoon of meat mixture on veined side of each leaf. Turn in the side ends + roll up completely.
Line bottom of saucepan with 3 or 4 grape leaves (without meat). Place rolled leaves on top in even layers.
Use an inverted plate to hold down rolls. Add water to cover. Bring to boil, then reduce to low heat + cook 30 minutes.
Add juice of one lemon before serving.

Iowa Ham Balls

2 pounds ground ham
2 pounds groud beef
2 cups graham cracker crumbs
2 eggs
1 1/2 cup milk

Sauce 2 cans tomatoe soup-undiluted
3/4 cup white vinegar
2 1/4 cup brown sugar
2 tsp. dry mustard

Combine ham + beef, crumbs, eggs + milk. Shape mixture 1/2 cup at time into balls and place in 9x13 baking pan.
Combine sauce ingredients. Pour over balls.
Bake uncovered at 350 degrees for 1 hour.

Lasagna

2 Tablespoons olive oil
3 pounds choice ground round
2 crushed cloves garlic
1-8 ounce can tomato sauce
1-#2 can Italian tomatoes
1 tsp. oregano
salt
pepper
1-8 ounce package lasagna (noodles)
2 Tablespoons olive oil
1/2 pound sliced mozzerella
3/4 pound (1 bottle ricotta cheese
1/4 pound grated Parmesean cheese

Brown beef in oil and garlic. Add tomato sauce, tomatoes, + seasoning. Cover + simmer to slightly thick stage. (about 20 minutues)
In meantime, cook lasagna (noodles) in boiling water till tender adding oil to prevent sticking.
In large flat serving dish place aternately layers of noodles, meat mix, mozzerella cheese, ricotta cheese, + parmesean cheese, ending with meat sauce + parmesean.
Bake until bubbly. Cut in squares to serve. 350 degrees for 40 minutes.

Ogrens Swedish Meatballs

1 pound lean pork
1 pound lean beef
(or 2 pounds ground chuck)
1 or 2 egg
2/3 cup soda crackers crushed
1 small onion (finely chopped)
1 tsp nutmeg
1/4 tsp. mace
1 tsp. allspice
1 Tablespoon salt
1/4 tsp. sugar
1 cup cream or 1/2 + 1/2
bacon fat
bullion cube

Swedish Meatballs ~ Barb Vandervoord

1/2 cup finely chopped onions
Tablespoon shortening
1/4 cup dry bread crumbs
1/3 cup water
1/3 cup cream 1/2 and 1/2 or milk
3/4 pound hamburg
1/4 pound pork (ground)
2 tsp. salt
1/4 tsp. pepper
dash cloves
1/3 cup butter
1/4 cup boiling water

combine, fry simmer 5-10 minutes

Pork BBQ ~ Sue O'Conner

2 pound pork roast
1 can tomato juice
1/2 cup vinegar
clove garlic - large onion
1/2 cup catsup
3/4 cup worchester sauce
sugar
shredd meat -

Quiche ~ Carol Hoogewind

Crust: pat into 9 inch pie plate

1 1/2 cup cooked rice
1 egg
1 1/2 ounce hard, shreddd cheese

Filling: mix and pour into crust

1 1/2 cup chopped broccoli cooked
2 eggs
1 ounces skimmed milk
1/2 tsp. salt
3/4cup or 4 ounces canned mushrooms

Sprinkle 1 1/2 ounce hard, shredded cheese over top.
Bake 375 degrees until set 25-30 minutes

Quiche 2

1 Bob Evans hot sausage - brown and drain
 mix together
 6 eggs beaten
 2 cups milk
 1 tsp. salt
 4 cups bread cubed
 add cooked sausage

Butter 9x13 dish. Pour in above. Top with 1 cup grated cheese
 Can be refrigerated overnight if desired.
 Bake uncovered 350 degrees 45 minutes (60 minutes if refrigerated)

Spicy Tomato Shrimp

Ketchup
 white pepper (powder)
 sugar
 sesame oil
 salt
 Lobster sauce
 cornstarch

Stir fry- garlic + green onion til it smells good.
 add carrots, mushrooms, baby corn, water chestnuts, apple slices, green pepper, tomatoes - any kind of stir fry vegetable.
 chow(?) for a couple minutes
 add shrimp. add sauce, bring to boil until it thickens.

Tortilla Bake - Weight Watchers

4 corn tortillas 6 inch heated
4 ounces monterey jack - grated - divided
2 egg beaten
1 cup skim milk
1 tsp. chopped jalpeno pepper
1/2 tsp. chili powder
1/4 tsp. powdered mustard
1 Tablespoon olive oil
1 garlic clove minced
1 Tablespoon plus 1 tsp chopped onion
1/2 cup tomato sauce
1/8 tsp. cumin
1 tomato cut in 8 slices

Place one tortilla in each of 4 round casseroles
Top each with 1/2 ounce cheese. In bowl combine eggs, milk, pepper, spices.
Pour 1/4 of egg mix on casserole. sprinkle with 1/2 ounce cheese.
Heat oil in saucepan. add garlic. saute. stir in tomato sauce and cumin.
Spoon 1/4 over tortilla. Garnish each with 2 tomato slices and 1 tsp. onion.

 

Wet Burritos

shred and blend
1 pound mozzarella
1 pound Montery Jack

3 pounds hamburg (2 or 3 packages Taco seasoning)
fry hamburg add packages simmer

1 large can refried beans (heat separately)

4 cups water
3 heaping tsp. beef bullion
2 heaping tsp. chicken bullion
1/2 tsp. garlic salt
1/4 tsp. powdered oregano
1/4 tsp. ground cumin
2 Tablespoons chili powder
1/2-3/4 Cup flour

add all above heat cooking until medium thick like gravy.
add beans, meat, cheese
roll, cover shells with sauce. add cheese on top. Bake 350 degrees until cheese in and out melted.
* not a listed ingredient, but I assume that flour tortillas are used

1 pound liver cut in slivers or strips
1/2 cup green pepper
1/2 cup celery
1 cup mush(rooms)
1/4 onion
parsley
1 Tablespoon bullion

2 Tablespoon margarine
1/2 cup pineapple juice
2 cups pineappel chunk
2 tsp. soy sauce
ginger
4 Tablespoon cornstarch
1/2 cup water

1 pound sage pork sausage
2 Tablespoons chopped onion
6 Tablespoons flour
1 quart milk
1/2 tsp. poultry seasoning
1/2 tsp. nutmeg
1/4 tsp. salt
Dash worcestershire sauce
Dash hot pepper sauce

Fry sausage - Drain
Stir in flour - cook about 6 minutes or until mixture bubbles and turns golden. Stir in milk.
Add seasonings. Cook until thick.

Pork Chops
1 can broth
2 Tablespoons chopped onion
2 Tablespoons green pepper
1 1/? cup chicken broth
Tablespoon worchester
1/4 tsp. cumin

350 degrees 35 to 40 (minutes)

3 ounces cream cheese (small)
3 Tablespoons oleo
2 cups boned cooked chicken or 25 ounce can
1/4 (tsp.) salt 1/8 (tsp.) pepper
2 Tablespoon milk
1 tsp. chopped onion
Tablespoon chopped pimento
8 ounce can cresent rolls
3/4 cup crushed croutons

Blend cheeses - 2 T butter -
add next six ingredients
Rolls in 4 rectangle
put meat in center
dip in butter and croutons
Bake - ungreased cookie sheet 350 degrees 20-25 minutes

4 cups cooked diced chicken
2 10 ounce frozen broccoli
2 cans cream chicken soup
1 cup mayonnaise
1 Tablespoon lemon juice
1 tsp. curry powder

Layer broccoli chicken soup
top with croutons
bake at 350 degrees 30-40

Croutons 325 degrees 20 min(utes)
toss in butter in fry pan
