Relishes ~ Condiments

 

Dill Pickles

5 clump dill weed
 place in jar slice pickles
 in jar - 3 pieces garlic on top

3 cups vinegar
 1 cup water
 2 1/2 cups sugar
 3 Tablespoons salt
 Boil Pour over pickles + seal

Garlic Dill Chip
 This seems to be a repeat of the recipe above, written slightly different

5 Clumps dill weed
 3 bulbs garlic
 Place in bottom of jar
 Slice pickles into jar
 Place on top of jars
 Bring to boil
 3 cups vinegar
 1 cup water
 2 1/2 cups white sugar
 Pour over pickles and seal.

Kens Mustard

4 oz can Colemans dry mustard
2 eggs
1 Tablespoon butter
2 Cups flour
1 Tablespoon salt
1 1/2 cup white vinegar
1 1/2 cup sugar

Melt butter, add beaten eggs - add mustard salt vinegar + sugar. Stir in flour until very smooth.  Must be refrigerated.

Linda's Pickled Beets

1 peck - Beets
7 cups sugar
7 cups vinegar
3 cups water
2-3 cinnamon sticks
handful cloves
wrap in cloth
Boil - put sliced beets in. Bring to boil. Seal in jar.
*I'm pretty sure the beets are peeled/skinned prior to cooking in brine.
